Sopa Azteca (Mexican Vegetable Soup) Recipe

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 Roma tomatoes, roasted or charred
  • 1 dried pasilla or ancho chile, seeded and soaked
  • 4 cups vegetable broth
  • 1 zucchini, diced
  • 1 cup corn (fresh or frozen)
  • 1 cup black beans (optional)
  • Salt and pepper to taste
  • 4 corn tortillas, cut into strips and fried or baked
  • Toppings: avocado slices, crema, fresh cilantro, lime wedges, queso fresco

Instructions

  1. In a blender, blend the roasted tomatoes, soaked chile, and garlic until smooth.
  2. Heat olive oil in a pot over medium heat. Sauté onions until translucent.
  3. Pour in the tomato-chile mixture and simmer for 5-7 minutes.
