Thanksgiving is a day to get together with your loved ones and share a great big meal. It’s an essential American tradition, and we love it. We also love Thanksgiving leftovers, but we understand that you can get tired of them pretty quickly, especially if you have a lot. If you’re dreading what to do with piles of leftover turkey, we have an idea: make it into Mexican food. Spice up your Thanksgiving leftovers with a turkey enchilada recipe that is sure to be a hit!
First, preheat your oven to 350º F. In a large bowl, combine the turkey, all the dry seasonings, and ¼ cup of the enchilada sauce. Add more salt to taste if necessary. Heat the tortillas on the stove or in a microwave for about a minute, flipping them halfway through so they are warm and pliable. Next, spread ¼ cup of enchilada sauce on the bottom of a 9×13 baking dish. Make sure you fully cover the dish. Assemble your enchiladas by filling each tortilla evenly with the turkey mixture and some cheese. After putting cheese in each enchilada, you should have about 1 ¼ cup left. Roll the tortillas tightly and place them seam-side down in the baking dish.
Once you have all the tortillas rolled up and placed in the dish, pour the remaining enchilada sauce over them and top with the rest of the cheese. Bake the enchiladas for 20 minutes, until the cheese bubbles. Top them off with lettuce, cilantro, diced onion, sour cream, or whatever else you like, and serve immediately.
